Veggie-Baked Halibut

Halibut is my absolute favorite fish, and last night’s recipe made me love it even more. Rather than making fish, with a side of vegetables, this recipe combines the best of both worlds — fish and veggies…and feta! Yum.

This recipe isn’t quite as easy as my FABULOUS salmon (if you haven’t tried it you should), but it’s pretty close. It just takes a few extra minutes to chop and sauté the veggies. And the veggie topping on this fish is SO worth it. I was eating it right out of the bowl.

First, preheat your oven to 450 degrees; and coat a baking dish with cooking spray. Place your halibut (cut in two pieces) into the baking dish. Squeeze one small lemon over both halves, followed by 1 tsp of olive oil. Sprinkle your fish with Kosher (or sea) salt and pepper. I added a dash of Susie Q’s seasoning, but feel free to use your favorite seasoning.

Next, heat the remaining olive oil (1 tsp) over medium heat. Add the diced onion to the hot skillet and sauté for 2-3 minutes. Then, add the zucchini, and cook for an additional 2 minutes. Add the minced garlic and sauté, stirring constantly for 45 seconds. Remove from heat and let cool.

Gently mix your diced tomatoes, 3 tbsp of feta cheese, and fresh dill in a bowl.

Combine your tomato mixture with the zucchini mixture; and then season with salt, pepper and your favorite seasoning, to taste. This is when I started eating out of the bowl…oops! 😉

Now, pile that heavenly mixture on top of the halibut. (I had a little mixture left over, but obviously it didn’t go to waste.)

Last, but not least, sprinkle the remaining feta cheese equally on both pieces of fish.

Place in the oven, and bake for 15-20 minutes. My cuts of fish were pretty thick, so I baked mine for about 21 minutes.

Serve immediately, and enjoy!

– 1 lb. of fresh halibut (feeds 2, perfectly)

– 1/4 yellow onion, diced
– 1 clove of garlic, minced
– 10 cherry tomatoes, diced
– 2 tbsp fresh dill, chopped
– 4 tbsp feta cheese
– Kosher or sea salt
