Good news, y’all — I’m finally feeling better and slowwwwly regaining my energy. Now if I could just get this Texas weather to cooperate. Saturday was such a beautiful tease…can we have that back, please?
With Spring Break and vacation season right around the corner, most everyone is in let’s-get-skinny mode. The fruit is flying off the shelves at the grocery store, and the juice-cleansing business is booming…to say the least. While I’m all for going on juice and fruit diets (kill me), I need sustenance. Most of my day is spent working out, so living off of fruit is just not gonna cut it, sister.
One of my favorite (low-cal) meals is egg salad. I grew up eating this stuff; it’s easy, it tastes good, and it’s good for you. But it can get a little boring. So with a little creativity, and a craving for cheese, I created egg salad melts. They are super healthy and easy to throw together. They’re perfect for lunch or dinner, and will fill you up completely.
I start with a classic, simple egg salad recipe.
I use Eggland’s Best Hard-Cooked Peeled eggs; and they are just as good (if not better) as hard-boiling your own eggs. It’s just one less step for your convenience.
Finely chop the eggs and place them in the bowl. Then add all remaining ingredients.
Mix all ingredients until well combined.
Pretty easy, huh? Onto the melts…
I use my favorite Ezekiel bread for this recipe, but feel free to use whatever bread you like. This particular bread has 3 grams of fiber per slice, plus 4 grams of protein; and it contains NO flour. I would give it a try if I were you.
Start by toasting your bread slices, and then lay them on an ungreased baking sheet. Add a slice of swiss cheese to each bread slice.
Place baking sheet in the oven on broil for 3-4 minutes, and then slice the avocado.
Take the baking sheet out of the oven once cheese is completely melted.
Add the prepared egg salad and sliced avocado to each slice of bread, and top with a dash of black pepper.
And then, enjoy!
Ingredients for Simple Egg Salad:
– 1 package of Eggland’s Best Hard-Boiled Peeled Eggs
– 1 1/2 tablespoons light mayo
– 2 tablespoons yellow mustard
– garlic salt and pepper to taste
– a dash of kosher salt
**You can adjust the ingredients to suit your taste. Just remember, the less mayo, the better for you.
Ingredients for Egg Salad Melts:
– prepared egg salad
– swiss cheese slices
– Ezekiel bread slices (or whatever bread you prefer)
– 1 avocado
Instructions:
Set oven to broil. Finely chop hard-boiled eggs and place into bowl. Add light mayo, mustard and salt and pepper, and then mix until well combined. Set egg salad aside.
