Whipped Cranberry Protein Pudding

It’s not every day I get approached to collaborate with one of my favorite brands. A brand I’ve been loyal to for almost 15 years. A brand that’s nourished me through life’s ups and downs. A brand that’s made snacks better, dinners easier, and my body stronger. And despite its countless competitors, Smoothie King, IMO, still reigns.

I’m pretty sure I’ve tried almost every single smoothie on the menu. I was a loyal Angel Food-er for years. And Pineapple Surf? YES, please! But over the past couple of years, I’ve become obsessed with the Lean1 smoothies…chocolate, vanilla AND strawberry. And just in time for spring and summer, there’s a new Lean1 smoothie – Lean1 Tropical. Pineapples and mangos? Yes, lawd!

But as much as I love a good smoothie, what’s better than incorporating the taste of your favorite smoothie into one of your favorite breakfasts?!

If you like Cream of Wheat, cranberries, cake batter, and pudding, you are going to LOVE this little recipe. It’s super easy, super healthy, and reeeealllyy satisfying.

The secret ingredient is the Vanilla Lean1 Healthy Performance Shake Mix. I’m telling you, this stuff is SO yum. In water, in almond milk, in a smoothie, in your favorite dessert…the limit does not exist. You can buy the mix at any of your local Smoothie King locations (in chocolate and strawberry, too). My Whipped Cranberry Protein Pudding can be enjoyed for breakfast, for a snack, or even for dessert. And you can make it your own with your favorite fruit topping. (Bananas are BOMB on top. Just sayin.)

Ingredients
-2 cups Diet Cranberry Juice
-1/4 cup Cream of Wheat
-3 tbsp. Vanilla Lean1 Healthy Performance Shake Mix
-Your favorite fruit for garnish

Instructions
Combine first three ingredients in a medium saucepan, and mix well. Bring the mixture to a boil, stirring occasionally. Lower heat, and cook for 8-10 minutes, or until mixture starts to thicken. Once thickened, remove from heat, and let cool for 15 minutes.

Transfer mixture into handheld or stand mixer, and beat until fluffy (about two minutes). Chill the mixture for at least 30 minutes, top with your favorite fruit, and enjoy.

Tip: For a thinner pudding, use an additional tablespoon of cranberry juice. [/recipe]
